Dan and I have been working out our plan for the last twelve months. We have selected equipment we think will streamline our processing based on a broad range of products. Our business office and product storage is in Kenner. We are temporarily leasing kitchen space in Elmwood from a friend to produce our products. We have test kitchen space at the Kenner office and Dan teaches classes at our main office.
We have been pursuing leasing a Federally inspected sausage plant in Kenner near the airport. We are also looking into the option of building a plant from scratch in the same area. The second half of 2021 will make our path clear. For the time being, we are moving forward with our retail sales through sales at our lacraftbutchers.com e-commerce web site, our office, farmer’s markets, social media and internal email list. Our hope is to begin participating in some of the local festivals. Keep a watch out for us when Covid recedes.
