Pork Belly Burnt Ends

Pork Belly no skin

  • Slice in 1 1/2” cubes.
  • Season with your favorite BBQ Savory & Sweet rub
  • Set Smoker or grill to run at 250 to 275.
  • Place cubes on cooking rack or grill grates.

Cook at 250 to 275 for 3 hours.
Remove cubes and place in foil or half pan.
Sprinkle with Brown Sugar, Honey and place pats of butter.
Cover and replace on pit.

Cook at 275 for 1½ hours

Remove and glaze (See below) with sauce by tossing in pan or foil holding the cubes.

Replace on pit in open container to caramelize the sauce and glaze the finish for 5 to 10 minutes.

Remove and serve.

Glaze #1
Drain Juice from pan and combine Ends with 1 Cup of your favorite BBQ Sauce. Add Pepper Jelly to taste. Mix and toss cubes with glaze.
Glaze #2
1 Cup of your favorite BBQ Sauce. ¼ Cup Apple Juice. ¼ Cup Apple Jelly. 1 TBS Franks Hot Sauce. Mix and toss cubes with glaze.
